We were sick of eating and cooking so I made quesadillas with all the different cheeses we had left over from the Christmas eve party, plus the leftover guacamole and salsa. I also made some with sauteed mushrooms and onion. Larry loved them. I used to make these for Meredith and Ben with whatever was in the fridge.
